La maturation s\u2019ach\u00e8ve, \u00ab Ao\u00fbt a fait le mo\u00fbt \u00bb C\u2019est dans les derniers jours qu\u2019un bon mill\u00e9sime a encore une chance d\u2019\u00eatre tr\u00e8s bon.<\/p>\n<p>C\u2019est le moment de se retrouver en famille \u00e9largie pour r\u00e9colter manuellement certaines parcelles.<\/p>\n<p>Une grande effervescence s\u2019empare du vignoble. Nous vendangeons les raisins \u00e0 leur maturit\u00e9 optimale : manuellement pour le blanc, la cuv\u00e9e M\u00e9thode traditionnelle et le jus de raisin ; m\u00e9caniquement pour les vins rouges. Vendanges toujours respectueuses de l\u2019int\u00e9grit\u00e9 du raisin et de la vigne.<\/p>\n<p><strong>LA GERBAUDE<\/strong> Le traditionnel repas souligne la fin des vendanges. Notre \u00e9quipe de vendangeurs se retrouve autour d\u2019un grand repas convivial et festif, dans la joie et dans la bonne humeur ; le vigneron, lui, attend le temps de la fermentation.<\/p>\n<p><strong>LA VINIFICATION<\/strong> s\u2019effectue en cuve. C\u2019est la fermentation alcoolique qui est responsable de la transformation du jus de raisin en vin. Ce ph\u00e9nom\u00e8ne spontan\u00e9 a \u00e9t\u00e9 empiriquement ma\u00eetris\u00e9 bien avant d\u2019\u00eatre scientifiquement expliqu\u00e9 par Louis Pasteur au XIX\u00e8me si\u00e8cle.<\/p>\n<p>Les transformations biochimiques mises en jeu par la fermentation sont multiples et complexes. C\u2019est pourquoi il faut s\u2019assurer de leur ach\u00e8vement dans les meilleures conditions possibles. La fermentation alcoolique est suivie d\u2019une mac\u00e9ration plus ou moins longue pour donner au Haut Bicou ses caract\u00e9ristiques.<br \/> La mac\u00e9ration se poursuit jusqu\u2019\u00e0 l\u2019\u00e9coulage ; les vins sont alors presque \u00ab finis \u00bb. Mais pour qu\u2019ils soient tout \u00e0 fait stables, il faut que s\u2019accomplisse la fermentation malo-lactique indispensable pour les vins rouges ; c\u2019est la transformation par des bact\u00e9ries naturellement pr\u00e9sentes dans le vin de l\u2019acide malique en acide lactique.<\/p>\n<p><strong>L\u2019\u00c9LEVAGE<\/strong> se fait en cuves et en f\u00fbts de ch\u00eane. Aux premiers froids, le vin est soutir\u00e9 pour la mise en barriques bordelaises (225 litres). Fabriqu\u00e9es avec du bois de ch\u00eane fran\u00e7ais pour sa finesse aromatique et sa puissance tannique, complices de nos vins.<\/p>\n<p><strong>LA TAILLE<\/strong> est r\u00e9alis\u00e9 \u00e0 la descente de s\u00e8ve en guyot double dite taille bordelaise.<\/p>\n<p><span style=\"font-size: x-large;\"><em>PRINTEMPS\/\u00c9T\u00c9<\/em><\/span><\/p>\n<p><strong>LES TRAITEMENTS<\/strong> pr\u00e9ventifs. Sous l\u2019influence oc\u00e9anique donc humique, la vigne est sujette au mildiou donc l\u2019utilisation parcimonieuse de la bouillie bordelaise combin\u00e9e \u00e0 des d\u00e9coctions de plantes (ortie, pr\u00eale, consoude et foug\u00e8re) permet des traitements l\u00e9gers pour assurer la bonne sant\u00e9 de la plante.<br \/> Ce m\u00e9lange permet de maintenir des seuils infimes de cuivre dans le sol. Intervenir quand il est n\u00e9cessaire mais pas trop.<\/p>\n<p><strong>L\u2019AGRO-\u00c9COLOGIE<\/strong> Les sols sont enherb\u00e9s naturellement et sem\u00e9s d\u2019engrais verts afin d\u2019apporter une diversit\u00e9 dans la monoculture qu\u2019est la vigne : l\u2019avoine et l\u2019orge pour restructurer et maintenir les sols, le pois fourrager pour l\u2019azote capt\u00e9 dans l\u2019air et restitu\u00e9 par les racines, la moutarde blanche qui d\u00e9compacte la terre.
